Poached egg with sauteed butternut squash, zucchini, and red pepper
I love to have a hot breakfast first thing in the morning. Although I usually have oatmeal because it’s so quick to put together, sometimes I like to mix it up. Last summer I tried poached eggs for the first time, and I cannot tell you how good they are! When you put that poached egg on top of some sauteed veggies, you get such a savory and delicious breakfast!
Eggs are so nutritious and are considered one of the healthiest foods on the planet. Just one egg contains so many vitamins and nutrients. Among theses are Vitamin A, Vitamin B12, Vitamin B2, Selenium (helps with metabolism and has antioxidant properties), Calcium, Zinc, and so much more! They are high in protein and a great source for healthy fats. Eggs also contain Choline, which aids in building cell membranes. They are also great for eye health.
Butternut squash is a great source of fiber, potassium, and other nutrients. This plant food helps with digestion. It also enhances your complexion and increases energy. Butternut squash, also known as winter squash, can contribute to a healthy lifestyle and weight.
Zucchini is great for your heart. The folate in zucchini breaks down amino acids that cause stroke and heart attacks. Its fiber content aids in burning fat, which makes it great for weight loss! Zucchinis are also very hydrating. They reduce headaches, improve eye health, and help with those puffy eyes (which we mommas need due to the lack of sleep we get). Other benefits include aiding the immune system, helping with respiratory problems, and lowering cholesterol. The vitamins in them also help strengthen bones and teeth.
Red peppers are full of vitamins A and C, potassium, and fiber. They actually have the most nutrition out of all peppers because they are on the vine the longest!
When you put all these veggies together with the egg, you get a meal that is packed full of nutrients. It’s a great way to start off the day and your body will thank you. Plus I love getting in those veggies first thing in the morning!
- 1-2 eggs
- 1/2 zucchini
- 1/2 cup of cubed butternut squash
- 1/4 cup of chopped red pepper
- 2 tbsp oil of choice
- salt and pepper to taste
Directions for sauteed veggies
- Heat skillet, add oil
- Add butternut squash, zucchini, and red pepper
- Cook on medium heat, stirring occasionally for ≈5 minutes.
- Cover and cook on low heat ≈ 20 minutes or until veggies are tender.
- Season to taste
Directions for poached egg
- Heat water in sauce pan, bring to boil
- Turn off heat
- Add in egg(s)
- Cover sauce pan
- Let it sit for 2- 5 minutes. *I let it sit for 5 minutes because I don’t like the yolk to be overly runny*
- Remove lid, lift out egg with slotted spoon
- Serve immediately
*I like to put the veggies in a bowl and place the egg on top with a sprinkle of crushed red pepper flakes*
